Some recipes come to life in the kitchen on a quiet evening, and some come to life on a gorgeous afternoon with good company and nowhere else to be. This Sweet Heat Ham & Mozzarella Ciabatta Sandwich was the latter.
A few nights before, I had thrown it together on a whim. Layering ham, fresh mozzarella, roasted red peppers, and arugula on ciabatta, then finishing it with what I can only describe as the ingredient that changes everything: a drizzle of hot honey.
Donnie and I packed them up and took them out to enjoy by the Hartley Greenhouse on one of those perfect weather days that reminds you why you love where you live.

He loved them so much he was already asking for them again before we finished eating! So when I sat down that evening to share the exciting news with my Smiths Country Gardens followers that I was starting a blog, and that my daughter Ashley and I were going to do it together, this was the sandwich I chose to share. I couldn’t give away the secret ingredient just yet, but I promised it was worth the visit to the blog.
Now here we are, and it is time to spill it!

The secret is the hot honey. What starts as a gentle drizzle never stays that way. At our house, we drizzle, take a bite, and then drizzle a little more. If you love sweet heat, do not skip it. It’s not nearly as spicy as you might expect because the sandwich is so full of other flavors that everything balances beautifully. It just ties it all together in the most wonderful way.
About Hot Honey
If you haven’t cooked with hot honey yet, you are in for a treat. Hot honey is exactly what it sounds like – pure honey infused with chili peppers or red pepper flakes, creating a condiment that is sweet, warm, and gently spicy all at once. The sweetness softens the heat, and the heat cuts through richness in a way that plain honey simply cannot.
You can find it at most grocery stores now, or online. Mike’s Hot Honey is one of the most well-known brands, but many local honey producers make their own versions worth seeking out.

Why You’ll Love This Sweet Heat Ham and Mozzarella Ciabatta Sandwich
It tastes like it’s from a gourmet deli – built at home in about 25 minutes with simple, quality ingredients.
The hot honey is everything. Sweet, warm, and gently spicy, it ties every single flavor together.
Layers of flavor and texture. Rich ham, creamy melted mozzarella, soft sweet roasted red peppers, peppery fresh arugula, and pillowy ciabatta. Every bite has something going on!
Great warm or cold. Serve straight from the oven or wrap in foil and pack for a picnic or tailgate. It travels really well.
Completely flexible. Swap the cheese, change the ham, adjust the heat level. This sandwich welcomes variations.
Ingredients

Ciabatta rolls: Ciabatta’s open, airy crumb soaks up the hot honey without going soggy, and its slightly chewy crust holds everything together. Toast lightly for added texture and crispness, or leave soft. Your choice!
Deli ham: Quality matters here. A better ham brings a richer, more flavorful result. Ask for it sliced thin at the deli counter. Thick slices overpower the other flavors rather than working with them.
Fresh mozzarella: Creamy, mild, and perfectly melty when warmed. Provolone and burrata are both excellent alternatives.
Roasted red peppers: Pat them dry with a paper towel before layering in – this is important. Extra moisture will make the ciabatta soggy. They bring a soft, slightly sweet richness with a subtle smokiness.
Fresh arugula: Added after the sandwiches come out of the oven so it stays fresh and peppery. Makes every bite feeling bright.
Hot honey: Start with a generous drizzle, then add more if you want. And more. You’ll see. Keep the jar on the table because everyone will want extra.
Olive oil: A drizzle over the top alongside the hot honey adds a bit of richness.
Salt and pepper to taste: A light sprinkle over the top at the very end. The ham and roasted peppers already carry salt, so taste as you go.

How to Make Sweet Heat Ham and Mozzarella Ciabatta Sandwich
Prep the ciabatta. Slice each roll in half. Toast lightly for a bit of crispness or leave soft.
Build the layers. Divide the ham and mozzarella evenly across the bottom halves. Top with the roasted red peppers.

Warm in the oven. Wrap each sandwich in foil and heat until the mozzarella is warm and just beginning to melt.
Finish and serve. Top with fresh arugula and drizzle generously with hot honey and olive oil. Season with salt and pepper to taste. Serve right away or wrap back up in foil and tuck into a picnic basket.

Tips for the Best Sweet Heat Ham and Mozzarella Ciabatta Sandwich
Pat the roasted red peppers completely dry. Extra moisture is the enemy of a good ciabatta sandwich.
Slice the ham thin. Thick slices dominate and push the other flavors out.
Don’t skip the hot honey. It might look like an optional garnish, but it really does tie the entire sandwich together. Start with a drizzle and work your way up.
Pack extra hot honey for a crowd. Whether it’s a picnic or a tailgate, tuck a small jar into the basket. Everyone will want more, and sticky hands are practically guaranteed.
Add the arugula after baking. It wilts quickly in heat. Adding it fresh off the oven keeps that peppery brightness intact.

Frequently Asked Questions
What if I can’t find hot honey at my grocery store?
Hot honey has become widely available in most grocery stores, often near the regular honey or in the specialty foods aisle. Mike’s Hot Honey is the most popular brand and can be ordered online. In a pinch, warm a few tablespoons of regular honey with a pinch of red pepper flakes, steep for a few minutes, and use that instead.
Can I use a different bread?
Ciabatta is ideal for its sturdy crust and open crumb that holds up to the fillings and the honey drizzle. A good Italian sub roll or a crusty baguette are solid alternatives. Avoid soft sandwich bread since it won’t hold up well.
Can I serve these cold?
For sure! These are wonderful cold and travel well. Skip the oven step, assemble with all the toppings including the arugula, wrap tightly in foil, and they’re ready for a picnic basket or lunchbox. The flavors actually meld together nicely as they sit.
