Equipment

  • baking sheet
  • aluminum foil
  • knife for slicing rolls

Ingredients

  • 4 ciabatta rolls (sliced in half)
  • 12 oz high-quality deli ham (sliced)
  • 8 oz fresh mozzarella (sliced)
  • 1 cup roasted red peppers (sliced and patted dry)
  • 2 cups fresh arugula
  • 4 Tbsp hot honey (for drizzling)
  • 1 Tbsp olive oil
  • salt and freshly cracked black pepper (to taste)

Instructions

  • Preheat the oven to 375°F (190°C). Slice each ciabatta roll in half. Toast lightly for extra crispness, or leave soft.
  • Divide the ham and mozzarella evenly among the bottom halves of the rolls. Top with the roasted red peppers, making sure they are well patted dry. Close each sandwich with the top half of the roll.
  • Wrap each sandwich tightly in foil. Place on a baking sheet and bake for 8 to 10 minutes, or until the mozzarella is warm and beginning to melt.
  • Remove from the oven and unwrap. Top each sandwich with fresh arugula, a generous drizzle of hot honey, and a drizzle of olive oil. Season with salt and pepper to taste.
  • Serve immediately while warm, or let cool. Keep extra hot honey on the table - everyone will want more.

Notes

Make Ahead:

  • Assemble sandwiches (without arugula, hot honey, or olive oil) and wrap tightly in foil up to 1 days ahead.
  • Refrigerate until ready to bake. Add a few extra minutes to bake time if going straight from the fridge.
  • Always add arugula, hot honey, and olive oil fresh after baking.

To store:

  • Store baked leftovers wrapped in foil or in an airtight container in the refrigerator for up to 2 to 3 days.
  • Best enjoyed the day they are made. Arugula may wilt slightly after storage.
  • Store arugula separately when possible and add fresh when serving leftovers.

To reheat:

  • Wrap in foil and warm in a 325° F (165° C) oven for 8-10 minutes until heated through.
  • Alternatively, warm in a skillet over medium-low heat, pressing gently.
  • Add fresh arugula and a new drizzle of hot honey after reheating.

To reheat:

  • Wrap in foil and warm in a 350°F (175°C) oven for 8 to 10 minutes until heated through.
  • Alternatively, warm in a skillet over medium-low heat, pressing gently.
  • Add fresh arugula and a new drizzle of hot honey after reheating.
  • Microwave works in a pinch. Use short intervals and note the bread will soften.

Freezing:

  • Freeze unbaked assembled sandwiches (without arugula, hot honey, or olive oil) wrapped tightly in plastic wrap then foil for up to 1 month.
  • Thaw overnight in the refrigerator before baking.
  • Bake at 375°F (190°C) for 10 to 12 minutes from thawed. Add arugula, hot honey, and olive oil fresh after baking.
