It’s hard to beat a warm bowl of white queso dip. That smooth, creamy texture and rich, savory flavor keeps you coming back for just one more chip (how is there always room for just one more?!). Queso dip is always the first thing we order when we sit down at our favorite local Mexican restaurant – and it disappears fast!
So of course, I had to figure out how to make that same restaurant-style white queso at home. And after the first time I made it, my entire family declared that I needed to make it every week. Which, to be honest, I do actually make this dip often!
This recipe is surprisingly simple, but tastes just like what you’d get at your favorite spot. It’s rich, creamy, and full of flavor. It’s a perfect appetizer for a party and on game day, or whip some up to drizzle over your tacos, quesadillas, burritos, fajitas, nachos, Mexican rice – you really can’t go wrong!

How to Make White Queso Dip
Prep the cheeses: Cut the Velveeta into 1-inch cubes and shred the pepper jack cheese. You can substitute the pepper jack Monterey Jack or Colby Jack cheese if needed. Just be sure to shred it yourself; pre-shredded cheeses do not melt as well and you’ll be left with a grainy dip.
Combine ingredients: Add the Velveeta, shredded pepper jack, evaporated milk, and diced green chiles to a medium saucpan.
Heat gently: Place the saucepan over medium-low heat, stirring constantly to help melt and to prevent the cheese from scorching to the bottom of the pan.
Melt until smooth: Continue stirring until the cheese is fully melted and the dip is smooth, creamy, and lump-free.
Adjust consistency: If the queso is too thick, you can stir in an additional splash of evaporated (or regular) milk until it reaches your desired consistency.
Serve warm: Transfer to a serving bowl or keep warm in a slow cooker for serving.

This queso is best served warm, while it’s perfectly melty, smooth, and easy to dip.
You can add a little extra flavor and texture with fresh chopped cilantro, diced tomatoes or pico de gallo, or sliced jalapeños. Or add in some browned chorizo, sausage, or ground beef for a hearty dip.

Frequently Asked Questions
Why is my queso not smooth?
You have to use the right cheeses. White American cheese (Velveeta Queso Blanco) is key. It’s going to give you that completely melted, dippable smoothness.
Can I use pre-shredded cheese?
My short answer: No. You may be tempted, but don’t do it. Buy a block of pepper jack cheese (or Monterey Jack or Colby Jack) and shred it yourself. Freshly shredded cheese will melt best. Pre-shredded cheese has it’s time and place, but melted dips is not one of them.
Can I make this recipe spicier?
Yes! Add jalapeños, hot sauce, or a pinch of cayenne or red pepper flakes.

Ultimate Restaurant-Style White Queso Dip
Equipment
- 1 medium non-stick saucepan (or slow cooker)
- 1 silicone spatula or wooden spoon
- cheese grater (for the pepper jack cheese)
Ingredients
- 16 oz. Velveeta queso blanco (cut into 1-inch pieces)
- 8 oz. block pepper jack cheese (freshly shredded (avoid pre-shredded for the smoothest melt))
- 12 oz. evaporated milk (full fat recommended)
- 7 oz. diced green chiles (mild or hot, undrained)
- fresh cilantro, diced tomatoes, or sliced jalapeños (optional garnish)
- tortilla chips (for serving)
Instructions
- Cube the Velveeta into 1-inch cubes. Shred the pepper jack cheese by hand; pre-shredded varieties contain anti-caking agents that can result in a grainy texture.
- In a medium non-stick saucepan, combine the cubed Velveeta, shredded pepper jack, evaporated milk, and green chiles.
- Place the saucepan over medium-low heat. Stir constantly with a spatula to prevent the cheese from scorching on the bottom.
- Continue stirring until the mixture is completely smooth. If the dip is too thick, add a splash more of evaporated milk (or regular milk if you don't have extra evaporated milk) until you reach your desired consistency.
- Transfer immediately to a serving bowl or a small slow cooker on the warm setting. Serve alongside salty tortially chips, warm pita, or use as a topping for tacos and burritos.
Slow Cooker Method:
- Place all ingredients in a slow cooker.
- Cook on low for about 2 hours, stirring occasionally.
- Once melted, turn slow cooker to warm.
Notes
Make ahead:
- Shred the pepper jack cheese up to a week in advance, storing in an airtight container in the fridge.
- Place all ingredients in a covered bowl in the fridge for a few hours, then toss in a pan to heat when ready to serve.
To store:
- Place in airtight container in the fridge for up to 3 days.
To reheat:
- Pour into a pan on medium-low heat until warmed through, stirring frequently.
- Place in a microwave safe dish, covered with a damp paper towel or plastic wrap. Microwave in 30-second intervals, stirring after each, until warmed through.
- If needed, use a splash of milk to thin just a bit.
Freezing:
- I would not freeze this dish. It does not hold up well when frozen, as the texture may change and the dairy and fats will separate when thawed.
