One of my favorite things is entertaining at hour home. Whether it’s a house full of guests or just Donnie and me on a quiet evening, I love making things feel special. There is something about a pretty little appetizer that turns an ordinary night into an occasion, like you’re being taken care of without ever leaving home. What I really love about this recipe is how well it lends itself to making ahead. Bake the phyllo cups earlier in the day and mix up the filling a day or two in advance. Just before guests arrive, spoon everything together.

Frozen phyllo shells are one of the most useful things you can keep in your freezer for entertaining. They bake up golden and crisp in just a few minutes, hold their shape, and work with both sweet and savory fillings.

Look for them in the freezer section near pie shells and puff pastry. Athens Foods is the most widely available brand. No thawing needed before baking. Just arrange on a baking sheet and pop in the oven.

Ingredients

Cherry tomatoes: Halved or quartered depending on their size. Smaller pieces fit better in the cups and are easier to eat in one bite.

English cucumber: English or hothouse cucumber is best. Fewer seeds means less moisture, which keeps the filling from going watery as it sits.

Green onion: Chopped and stirred in for a mild onion bite.

Roasted red pepper: Adds a soft, slightly sweet, smoky element. Jarred works perfectly.

Crumbled feta: Stirred into the filling and also used as a garnish on top. Feta straight from a block in brine has the best flavor and texture.

How to Make Cucumber, Tomato, & Feta Phyllo Cups

Bake the phyllo cups. Bake until lightly golden. Let them cool completely before filling. A warm cup will go soft the moment the filling goes in.

Prep and combine the filling. Dice, halve, and chop the vegetables, then toss everything together with the feta. Keep the pieces small enough to fit neatly into the cups.

Whisk the dressing. Olive oil, balsamic, honey, salt, and pepper. Done in under a minute. Make this ahead and refrigerate until needed.

Dress the filling. Pour the dressing over the vegetable mixture and stir gently. Don’t overdress. You want everything coated, not swimming.

Fill and garnish. Spoon the filling into each cooled cup. Top with a little extra feta and fresh basil right before serving.

Tips for the Best Phyllo Cups

Use English cucumber. Regular cucumber releases water into the filling as it sits and will make the cups soggy faster.

Cool the cups completely before filling. Warm phyllo goes soft quickly. Bake ahead, let them cool, and fill just before serving.

Assemble at the last minute. Make the dressing and filling as far ahead as you like, but don’t spoon into the cups until guests are about to arrive.

Re-crisp if needed. If the cups lose their crunch after sitting out, 2 minutes at 350°F brings them right back.

Don’t overdress. A light coat is all you need. Too much dressing and the filling gets wet, which rushes the soggy timeline.

Swap basil for mint for a slightly cooler, fresher flavor that works especially well in warmer months.

  • 1 cup cherry tomatoes (halved or quartered)

Instructions

  • Dice the cucumber, halve or quarter the cherry tomatoes, chop the green onion, and chop the roasted red pepper into small pieces.
  • Place all the prepped vegetables in a bowl and add the crumbled feta. Stir gently to combine.
  • In a small bowl or jar, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper until well blended.
  • Pour the dressing over the vegetable mixture and stir gently to coat everything evenly. Do not overdress.
  • Spoon the tomato-cucumber-feta mixture into each cooled phyllo cup. Top with a little extra crumbled feta and fresh basil.
  • Serve right away while the cups are crisp.
